Stillaging

Do

  • Stillage casks immediately upon delivery
  • Where a cask cannot be stillaged immediately, roll it prior to stillage to redistribute the finings
  • Position casks with the shive and keystone vertically aligned
 
1. Stillage level on day of delivery. 2. Vent with soft peg within 2-6 Hours Leave under soft peg 48-72 Hrs. 3) Replace soft peg every day until conditioning stops, thenuse a hard peg to keep condition  4. When on sale tilt when 1/2 to 2/3 full 5. Tap 24-48 Hours before they go on. Sale & Sample before putting on sale  -  “CAT” Test  6. Clean shive,keystone & cask taps etc “Hygiene essential”.
